- In a large pot, heat some oil over medium heat. Add the andouille sausage and cook until browned.
- Add the chopped vegetables and sauté until they begin to soften, about 5 minutes.
- Add the potatoes, Cajun spices, and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
- Stir in the heavy cream and cheddar cheese until melted and combined.
- Season with salt and pepper to taste. Serve hot.
