  • 1 lb Andouille sausage
  • 4 cups Potatoes, diced Use hearty varieties like Yukon Gold or Russet.
  • 2 cups Mixed vegetables (carrots, celery, onion)
  • 2 tbsp Cajun spices Adjust to taste.
  • 1 cup Heavy cream
  • 1 cup Cheddar cheese, shredded
  • 4 cups Chicken or vegetable broth
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large pot, heat some oil over medium heat. Add the andouille sausage and cook until browned.
  2. Add the chopped vegetables and sauté until they begin to soften, about 5 minutes.
  3. Add the potatoes, Cajun spices, and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  4. Stir in the heavy cream and cheddar cheese until melted and combined.
  5. Season with salt and pepper to taste. Serve hot.

Notes

For enhanced flavor, add a splash of hot sauce or smoked paprika. This soup can be adapted with various proteins or additional veggies.
