Ingredients
  

Pasta and Chicken
  • 12 oz penne or rotini pasta
  • 2 pieces chicken breasts, cubed
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
Vegetables
  • 1 small onion, diced
  • 1 piece red bell pepper, diced
  • 3 cloves garlic, minced
Sauce and Toppings
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Chopped parsley (optional, for garnish)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cook the pasta according to package instructions and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onions, bell peppers, and garlic, cooking until soft.
  4. Add the cubed chicken and sprinkle with Cajun seasoning, cooking until the chicken is no longer pink.
  5. Reduce heat and stir in cream cheese, heavy cream, chicken broth, and paprika until smooth.
  6. Combine the cooked pasta with the chicken mixture and stir well.
  7. Transfer to a greased baking dish and top with shredded cheddar and Parmesan cheese.
  8. Bake for 25-30 minutes, or until the cheese is bubbly and golden.

Notes

Enhance flavor by adding other vegetables like spinach or mushrooms. Customize the spice level with more or less Cajun seasoning as preferred. For a heartier meal, consider adding cooked shrimp or sausage to the mix. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months.
