Method
Prep the chicken:
- Toss chicken strips with 1 tablespoon Cajun seasoning until evenly coated.
Cook the pasta:
- Bring a large pot of salted water to a boil and cook fettuccine according to package directions until al dente. Drain and set aside.
Sear the chicken:
- Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook 5-7 minutes until golden brown and cooked through. Remove to a plate.
Sauté the vegetables:
- In the same skillet, add bell peppers and onion. Cook for 3-4 minutes until softened. Add garlic and cook 30 seconds more until fragrant.
Make the sauce:
- Reduce heat to medium. Add heavy cream, chicken broth, and remaining Cajun seasoning. Bring to a simmer and cook 3-5 minutes until slightly thickened.
Combine everything:
- Stir in Parmesan cheese until melted. Return chicken to skillet and add drained pasta, tossing to coat everything in the sauce. Season with salt and pepper to taste.
Serve:
- Garnish with sliced green onions and chopped parsley before serving hot.
