Ingredients
  

  • 1 pound boneless skinless chicken breasts, cut into strips
  • 2 tablespoons Cajun seasoning divided
  • 2 tablespoons olive oil
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 medium onion diced
  • 3 cloves garlic minced
  • cups heavy cream
  • ½ cup chicken broth
  • ¾ cup freshly grated Parmesan cheese
  • 12 ounces fettuccine pasta
  • 3 green onions sliced
  • Fresh parsley chopped (for garnish)
  • Salt and freshly ground black pepper to taste

Method
 

Prep the chicken:
  1. Toss chicken strips with 1 tablespoon Cajun seasoning until evenly coated.
Cook the pasta:
  1. Bring a large pot of salted water to a boil and cook fettuccine according to package directions until al dente. Drain and set aside.
Sear the chicken:
  1. Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook 5-7 minutes until golden brown and cooked through. Remove to a plate.
Sauté the vegetables:
  1. In the same skillet, add bell peppers and onion. Cook for 3-4 minutes until softened. Add garlic and cook 30 seconds more until fragrant.
Make the sauce:
  1. Reduce heat to medium. Add heavy cream, chicken broth, and remaining Cajun seasoning. Bring to a simmer and cook 3-5 minutes until slightly thickened.
Combine everything:
  1. Stir in Parmesan cheese until melted. Return chicken to skillet and add drained pasta, tossing to coat everything in the sauce. Season with salt and pepper to taste.
Serve:
  1. Garnish with sliced green onions and chopped parsley before serving hot.
