Ingredients
  

Main Protein
  • 1 can white beans (cannellini or great northern) Rinse and drain to remove excess sodium.
Starch/Tortillas
  • 8 small corn or flour tortillas Warm them slightly to make pliable.
Seasoning
  • 1/2 cup buffalo sauce Choose your favorite brand for best flavor.
Aromatics & Vegetables
  • 1 avocado (sliced) Use ripe avocados for the best creaminess.
  • 1 cup shredded lettuce Add freshness and crunch.
  • 1/2 cup diced tomatoes Dice just before serving to keep them crisp.
  • 1/4 cup diced red onion Dicing adds flavor and texture.
Optional Finishing Ingredients
  • to taste cilantro (optional) Chop just before serving.
  • 1 lime wedges Squeeze over the tacos just before eating.

Method
 

Preparation
  1. Heat a large skillet over medium heat.
  2. Add the drained white beans to the skillet and cook for about 3-4 minutes, stirring occasionally, until heated through.
  3. Pour in the buffalo sauce and stir to coat the beans evenly. Cook for an additional 3-5 minutes.
  4. While the filling cooks, warm the tortillas in a separate skillet or microwave for about 30 seconds.
  5. Spoon the buffalo bean mixture into each tortilla.
  6. Top each taco with sliced avocado, shredded lettuce, diced tomatoes, and diced red onion.
  7. Serve immediately with lime wedges and optional cilantro garnish.
