Ingredients
  

Crust Ingredients
  • 4 cups frozen shredded hash browns, thawed and squeezed dry
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
Topping Ingredients
  • 1 cup shredded cheddar cheese Can substitute with Monterey Jack or feta.
  • 1/2 cup cooked and crumbled breakfast sausage or bacon Optional; use plant-based for vegetarian.
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped green onions
  • 4 large eggs
  • 1/4 teaspoon paprika
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix the hash browns, melted butter, salt, and black pepper until well combined.
  3. Press the hash brown mixture into a greased pizza pan to form a crust.
Baking
  1. Bake in the oven for 20 minutes, or until the edges are golden brown.
  2. While the crust is baking, whisk the eggs in a bowl and season with paprika, salt, and pepper.
  3. Remove the crust from the oven, and sprinkle cheese, sausage or bacon, bell pepper, and green onions evenly over it.
  4. Pour the whisked eggs over the toppings on the crust.
  5. Return to the oven and bake for another 10-15 minutes, or until the eggs are set.
  6. Let cool briefly, slice, and enjoy!

Notes

Experiment with different cheeses and vegetables for unique flavors. Store leftovers in an airtight container for up to 3 days.
