Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced sweet potatoes in olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 20 minutes or until tender and slightly crispy.
  3. In a large bowl, mix the shredded chicken with BBQ sauce until well coated.
Assembly
  1. Once the sweet potatoes are done, assemble your bowls by layering the roasted sweet potatoes, BBQ chicken, coleslaw mix, and pickles.
  2. Garnish with green onions if desired, and serve warm.
