Preparation
- Preheat Oven or Air Fryer: Set your oven to 400°F (200°C) or preheat your air fryer.
- Season the Salmon: In a bowl, combine salmon cubes with garlic powder, smoked paprika, salt, and pepper. Mix well.
- Coat in Breadcrumbs: Dredge the seasoned salmon in panko breadcrumbs until covered evenly.
Cooking
- Bake or Air-Fry: Place the salmon bites on a baking sheet or in the air fryer basket, drizzle with olive oil, and cook for about 15-20 minutes until golden brown.
- Make the Bang Bang Sauce: Mix mayonnaise, sweet chili sauce, sriracha, optional honey, and lime juice until smooth.
- Assemble the Bowls: Serve salmon bites over jasmine rice, topped with purple cabbage, avocado, carrots, and green onions. Drizzle with Bang Bang sauce and garnish with cilantro and sesame seeds.
Notes
For flavor enhancement, add fresh ginger to the Bang Bang sauce. You can also customize by swapping salmon for shrimp or tofu to make it vegetarian.
