- Cut the chicken into bite-sized pieces. Season with salt and pepper.
Cooking
- Heat oil in a skillet over medium heat. Add chicken pieces and cook until golden brown and cooked through, about 7-10 minutes. Remove from the skillet and set aside.
- In the same skillet, add broccoli, red pepper, and carrot. Stir-fry for about 5 minutes until tender-crisp.
- In a bowl, mix mayonnaise, sweet chili sauce, Sriracha, and soy sauce until combined.
- Add cooked chicken to the skillet with the vegetables. Pour in the sauce and stir until everything is well coated and heated through.
- Spoon the chicken and vegetable mixture over a bed of rice and garnish with green onions and sesame seeds.
