  • 1 pound boneless, skinless chicken breasts
  • 2 cups cooked rice (white or brown)
  • 1 cup broccoli florets
  • 1 medium red bell pepper, sliced
  • 1 medium carrot, julienned
  • 3 stalks green onions, chopped
  • ½ cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha sauce adjust for spice level
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 2 tablespoons oil (for cooking)
  • Sesame seeds for garnishing

Preparation
  1. Cut the chicken into bite-sized pieces. Season with salt and pepper.
Cooking
  1. Heat oil in a skillet over medium heat. Add chicken pieces and cook until golden brown and cooked through, about 7-10 minutes. Remove from the skillet and set aside.
  2. In the same skillet, add broccoli, red pepper, and carrot. Stir-fry for about 5 minutes until tender-crisp.
  3. In a bowl, mix mayonnaise, sweet chili sauce, Sriracha, and soy sauce until combined.
  4. Add cooked chicken to the skillet with the vegetables. Pour in the sauce and stir until everything is well coated and heated through.
  5. Spoon the chicken and vegetable mixture over a bed of rice and garnish with green onions and sesame seeds.

Serve in clear bowls to showcase the colorful ingredients. Pair with fresh fruit salad or spring rolls for a complete meal.
