Method
 

Preparation
  1. Cook jasmine rice according to package instructions.

Cooking
  1. In a skillet, heat some oil over medium heat. Add chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 5-7 minutes.
  2. In the last few minutes of cooking, add the mixed vegetables to the skillet and stir until warmed.
Assembly
  1. To assemble the bowls, serve cooked chicken and veggies over jasmine rice.
