Baked Salmon with Spinach and Mozzarella

  • 2 fillets Salmon (Lachsfilet), to taste
  • 300 g Spinach (Blattspinat, thawed and drained)
  • 1 piece Onion (Zwiebel, sliced)
  • 2 cloves Garlic (Knoblauch, minced)
  • 200 g Sour Cream (Sauerrahm)
  • 150 g Mozzarella
  • 1 tbsp Olive Oil (Olivenöl)
  • to taste Salt (Salz und Pfeffer)
  • to taste Pepper (Salz und Pfeffer)

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. Heat olive oil in a skillet over medium heat. Add sliced onion and cook until soft.
  3. Add minced garlic and spinach, seasoning with salt and pepper. Cook until heated through, then remove from heat.
  4. In a bowl, mix the spinach with sour cream until well combined.
Cooking
  1. Place the salmon fillets on a baking sheet lined with parchment paper. Season with salt and pepper.
  2. Spoon the spinach and sour cream mix generously over each salmon fillet.
  3. Tear the mozzarella into pieces and sprinkle over the top of the spinach mixture.
  4. Place the baking sheet in the oven and bake for 25 minutes, or until the salmon is cooked through.
Serving
  1. Once done, remove from the oven, let it cool for a minute, then serve.
  2. Serve the salmon on a beautiful platter, garnished with fresh herbs for added color.
  3. Pair with a light salad or roasted vegetables to round out the meal.

Notes

Consider adding lemon juice before serving for a zesty finish. You can mix in your favorite herbs for added flavor.
