Preparation
- Preheat your oven to 180°C (350°F).
- Heat olive oil in a skillet over medium heat. Add sliced onion and cook until soft.
- Add minced garlic and spinach, seasoning with salt and pepper. Cook until heated through, then remove from heat.
- In a bowl, mix the spinach with sour cream until well combined.
Cooking
- Place the salmon fillets on a baking sheet lined with parchment paper. Season with salt and pepper.
- Spoon the spinach and sour cream mix generously over each salmon fillet.
- Tear the mozzarella into pieces and sprinkle over the top of the spinach mixture.
- Place the baking sheet in the oven and bake for 25 minutes, or until the salmon is cooked through.
Serving
- Once done, remove from the oven, let it cool for a minute, then serve.
- Serve the salmon on a beautiful platter, garnished with fresh herbs for added color.
- Pair with a light salad or roasted vegetables to round out the meal.

Consider adding lemon juice before serving for a zesty finish. You can mix in your favorite herbs for added flavor.
