  • 2 cups fresh spinach, chopped Make sure to wash spinach thoroughly to remove dirt.
  • 1 cup cream or milk Use heavy cream for a richer dish.
  • 1/2 cup grated Parmesan cheese Use freshly grated cheese for the best melt.
  • 1 clove garlic, minced Sauté garlic before adding spinach for depth.
  • salt and pepper to taste Avoid over-salting as the cheese will also add saltiness.
  • butter or olive oil for greasing Grease baking dish to prevent sticking.

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, melt some butter or olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add chopped spinach and cook until wilted, roughly 3-5 minutes.
  4. Grease a baking dish with butter or olive oil.
  5. In a bowl, whisk together the eggs, cream or milk, salt, and pepper.
  6. Spread the sautéed spinach evenly in the prepared baking dish.
  7. Pour the egg mixture over the spinach, ensuring it's evenly covered.
  8. Sprinkle grated Parmesan cheese on top.
  9. Place in the preheated oven for 15-20 minutes, or until the eggs are set and slightly puffed.

Notes

Experiment with different cheeses like feta or mozzarella for varied flavors. Add cherry tomatoes or mushrooms for extra veggies and flavor. Serve with a sprinkle of fresh herbs on top.
