  • 2 slices cooked and chopped bacon Use your favorite bacon type.
  • 2 large eggs
  • 1/3 cup shredded cheddar cheese Feel free to use other cheese varieties.
  • 1 8-inch flour tortilla Can be substituted with gluten-free tortillas.
  • 1 teaspoon butter Optional, for cooking.
  • Salt and pepper To taste.

Method
 

Preparation
  1. In a bowl, whisk the eggs with salt and pepper until well combined.
  2. Heat a non-stick skillet over medium heat and melt the butter, if using.
  3. Pour in the whisked eggs and scramble until cooked to your liking.
  4. Add the chopped bacon and mix to combine, then remove from heat.
Assembly and Cooking
  1. On one half of the tortilla, layer the scrambled egg mixture and sprinkle the cheese.
  2. Fold the tortilla over to create a half-moon shape.
  3. Place the quesadilla in the skillet and cook until golden brown on both sides, about 3-4 minutes per side.
  4. Remove from the skillet and cut into wedges.

Notes

Serve with salsa, guacamole, or sour cream for extra flavor. You can customize fillings with different cheeses or veggies.
