  • 6 slices bacon, chopped Crisp before adding to the soup.
  • 1 small onion, diced Sauté in bacon fat.
  • 2 cloves garlic, minced Add after the onion is translucent.
  • 3 cups chicken or vegetable broth Choose based on preference.
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded For a richer flavor.
  • to taste Salt and pepper Adjust based on preference.
  • Chopped chives or green onions for garnish Enhances presentation.

Cooking
  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside.
  2. In the bacon fat, add the diced onion and sauté until translucent.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Pour in the chicken or vegetable broth and bring to a simmer.
  5. Add the gnocchi to the simmering broth and cook according to package instructions.
  6. Lower the heat, then stir in the heavy cream and shredded cheddar cheese.
  7. Season with salt and pepper to taste.
  8. Garnish with crispy bacon and chopped chives or green onions before serving.

Notes

Serve hot in bowls with a sprinkle of extra cheese on top. Pairs well with a fresh side salad or crusty bread.
