Ingredients

  • 4 pieces boneless, skinless chicken breasts Rinse and pat dry before seasoning.
Starch/Pasta
  • 1 cup long-grain white rice Rinse the rice to remove excess starch.
Seasoning/Spice Blend
  • 1 teaspoon garlic powder No direct substitutes, but fresh minced garlic can be used.
  • to taste paprika, salt, and pepper Be mindful of salt as the soups contribute sodium.
Liquids/Dairy
  • 1 can cream of mushroom soup Pour straight into the baking dish.
  • 1 can cream of chicken soup Pour straight into the baking dish.
Aromatics & Vegetables
  • 1 piece onion, chopped Sautéing it first can enhance its flavor.
Optional Finishing Ingredients
  • 2 cups shredded cheese Cheddar or a blend works great.

Method
 

Preparation
  1. Preheat your oven to 350°F.
  2. In a 9×13-inch baking dish, combine the rice, soups, chicken broth, onion, garlic powder, paprika, salt, and pepper.
  3. Mix everything until well combined.
  4. Place the chicken breasts on top of the rice mixture.
Cooking
  1. Cover the dish with aluminum foil and bake for about 45 minutes.
  2. Remove the foil in the last 10-15 minutes to allow the chicken to brown.
  3. Sprinkle the shredded cheese on top and return to the oven for an additional 10 minutes.
Serving
  1. Allow the casserole to cool for a few minutes before serving.

Notes

Consider using shallots or leeks for a milder taste instead of onion. Add herbs like thyme or parsley for extra freshness.
