Ingredients
  

Main Ingredients
  • 1.5 lb Baby potatoes Fresh baby potatoes or small Yukon gold potatoes for best results.
  • 2 tablespoons Olive oil High-quality olive oil; avocado oil is a good alternative.
  • 3 cloves Garlic Minced garlic for better flavor infusion.
  • 0.5 tsp Salt Enhance flavor; adjust to taste.
  • 0.5 tsp Black pepper Enhance flavor; adjust to taste.
  • 1 tsp Dried herbs Such as dried thyme or Italian seasoning.
  • 0.25 cup Parmesan cheese Grated, sprinkle on top after cooking.
  • 1 handful Fresh parsley Chopped, for garnish.
  • pinch Red pepper flakes Optional for added heat.
Optional Dips
  • Sour cream For dipping.
  • Garlic aioli For dipping.

Method
 

Preparation
  1. Boil the baby potatoes in a pot of salted water for about 15 minutes or until fork-tender.
  2. While the potatoes cook, preheat your air fryer to 400°F (200°C).
Cooking
  1. Drain the potatoes and place them on a baking sheet. Gently smash each potato to about half an inch thick.
  2. Drizzle the smashed potatoes with olive oil and sprinkle with salt, pepper, and dried herbs.
  3. Carefully place the seasoned potatoes in the preheated air fryer basket in a single layer. Cook for 15-20 minutes, turning halfway through.
  4. In the last 2-3 minutes of cooking, sprinkle the parmesan cheese on top.
  5. Once done, remove the potatoes from the air fryer, top with fresh parsley and optional red pepper flakes, then serve with your favorite dips.
