Preparation
- Boil the baby potatoes in a pot of salted water for about 15 minutes or until fork-tender.
- While the potatoes cook, preheat your air fryer to 400°F (200°C).
Cooking
- Drain the potatoes and place them on a baking sheet. Gently smash each potato to about half an inch thick.
- Drizzle the smashed potatoes with olive oil and sprinkle with salt, pepper, and dried herbs.
- Carefully place the seasoned potatoes in the preheated air fryer basket in a single layer. Cook for 15-20 minutes, turning halfway through.
- In the last 2-3 minutes of cooking, sprinkle the parmesan cheese on top.
- Once done, remove the potatoes from the air fryer, top with fresh parsley and optional red pepper flakes, then serve with your favorite dips.
