Ingredients
  

For the Potato Skins
  • 4 medium russet potatoes Choose firm, fresh potatoes
  • 1 tablespoon olive oil For coating the potatoes
  • 1 cup shredded cheddar cheese Can substitute with other cheese if desired
  • 1/2 cup cooked and crumbled bacon For a vegetarian option, omit bacon
  • 1/2 cup sour cream Can use dairy-free sour cream for dietary restrictions
  • 2 tablespoons chopped chives For garnish
  • Salt and pepper To taste

Method
 

Preparation
  1. Preheat your air fryer to 400°F (200°C).
  2. Wash and scrub the russet potatoes thoroughly.
  3. Pierce each potato several times with a fork to allow steam to escape.
  4. Rub the potatoes with olive oil and season with salt and pepper.
Cooking
  1. Place the potatoes in the air fryer basket and cook for 25 minutes or until fork-tender.
  2. Carefully remove the potatoes and let them cool slightly.
  3. Cut each potato in half lengthwise and scoop out some of the flesh, leaving a bit for structure.
  4. Stack the potato halves back in the air fryer basket, skin-side down.
  5. Fill each potato skin with shredded cheese and crumbled bacon.
  6. Return to the air fryer for an additional 5 minutes, or until the cheese is bubbling and golden.
Serving
  1. Top with sour cream and chopped chives before serving.

Notes

For an added kick, sprinkle some hot sauce or jalapeños before serving. Customize your toppings with diced tomatoes, avocados, or different cheeses.
