Ingredients
  

For the Tuna:
  • 2 sashimi-grade ahi tuna steaks 6-8 oz each
  • 1 tbsp sesame oil
  • 2 tbsp sesame seeds
  • 1 tsp sea salt
  • ½ tsp black pepper
For the Dipping Sauce (Optional):
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp honey
  • 1 minced garlic clove
  • 1 tsp grated ginger
  • 1 sliced green onion

Method
 

  1. Prep Tuna: Pat tuna steaks completely dry with paper towels.
  2. Season: Brush tuna with sesame oil, then season with salt and pepper.
  3. Coat: Press sesame seeds onto all sides of the tuna steaks.
  4. Heat Pan: Heat a cast-iron skillet or heavy pan over high heat until smoking hot.
  5. Sear: Place tuna in pan and sear for 30-45 seconds per side for rare (or 1 minute per side for medium-rare).
  6. Sear Edges: Using tongs, briefly sear all edges for about 15 seconds each.
  7. Rest: Transfer to a plate and rest for 1-2 minutes.
  8. Slice: Using a sharp knife, slice against the grain into ½-inch pieces.
  9. Serve: Arrange on plates and serve immediately with optional dipping sauce.
