5-Star Pot Roast

Ingredients
  

Main Protein
  • 3-4 lb chuck roast Pat dry and season generously with salt and pepper.
Starch
  • 1.5 lb baby potatoes Wash and add whole.
Aromatics & Vegetables
  • 2 medium onions Chop coarsely.
  • 4 medium carrots Chop coarsely.
  • 4 cloves minced garlic
Seasoning
  • 1 tbsp thyme Dried or fresh, for maximum flavor.
  • 1 packet onion soup mix
  • 1 tsp salt
  • 1 tsp pepper
Liquids
  • 4 cup beef broth Use low-sodium for more salt control.
  • 2 tbsp Worcestershire sauce Stir in during cooking.

Method
 

Preparation
  1. Preheat your oven to 300°F (150°C).
  2. Season the chuck roast generously with salt and pepper.
Searing
  1. In a large oven-safe pot, heat oil over medium-high heat. Sear the roast on each side for about 4-5 minutes until browned.
Adding Aromatics
  1. Remove the roast and add onions and garlic to the pot. Sauté for about 2-3 minutes until fragrant.
Deglazing
  1. Add a splash of beef broth, scraping up the brown bits from the pot until the broth reduces slightly.
Combining Ingredients
  1. Return the roast to the pot, placing baby potatoes and carrots around it. Pour in the remaining beef broth and Worcestershire sauce.
Seasoning and Cooking
  1. Sprinkle thyme and onion soup mix, then cover the pot with a lid.
  2. Transfer the pot to the preheated oven and cook for about 3 hours or until the meat is fork-tender.

Notes

Feel free to enhance flavor with red wine or customize with different herbs and vegetables. To serve, garnish with fresh parsley for a pop of color.
