Preparation
- Preheat your oven to 300°F (150°C).
- Season the chuck roast generously with salt and pepper.
Searing
- In a large oven-safe pot, heat oil over medium-high heat. Sear the roast on each side for about 4-5 minutes until browned.
Adding Aromatics
- Remove the roast and add onions and garlic to the pot. Sauté for about 2-3 minutes until fragrant.
Deglazing
- Add a splash of beef broth, scraping up the brown bits from the pot until the broth reduces slightly.
Combining Ingredients
- Return the roast to the pot, placing baby potatoes and carrots around it. Pour in the remaining beef broth and Worcestershire sauce.
Seasoning and Cooking
- Sprinkle thyme and onion soup mix, then cover the pot with a lid.
- Transfer the pot to the preheated oven and cook for about 3 hours or until the meat is fork-tender.
Notes
Feel free to enhance flavor with red wine or customize with different herbs and vegetables. To serve, garnish with fresh parsley for a pop of color.
