  • 1 box cake mix Any flavor of cake mix will do.
  • 2 large eggs Frozen eggs can be used if thawed beforehand.
  • 1/3 cup vegetable oil You can substitute with another oil if desired.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the cake mix, eggs, and vegetable oil. Mix until well combined and smooth.
  3. Scoop tablespoon-sized portions of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 10-12 minutes or until the edges are lightly golden.
  2. Allow cookies to cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For added flavor, toss in some chocolate chips or nuts. Store cookies in an airtight container at room temperature for up to one week, or freeze for up to three months.
